His contribution to the Netflix documentary series, “Las Crónicas del Taco” (The Taco Chronicles), catapulted his fame nationally, turning his modest restaurant into a culinary sensation. In this edition, the chef presents his “Sonoran Tacos” with golden flour tortillas, ribeye, avocado, and green chili, accompanied by a red habanero sauce. Each bite is an invitation to a culinary journey where the flavors of northern Mexico intertwine in harmony, creating a unique experience that pays homage to the culinary richness of Mexico.

The perfect pairing for these delicious tacos, full of flavor and tradition, is the “Toy Plane” (Avión de Juguete), a red wine that shares similarities with our passion for cooking and authentic flavors. Coming from the regions of Riverland, McLaren Vale, and Langhorne Creek, this wine is a blend of Grenache (85%), Shiraz (10%), and Mataro (5%) grapes. Its cherry-red color with bright highlights announces a feast of red fruits such as cherries, raspberries, and strawberries, along with hints of rose petals and wildflowers. On the palate, it surprises with its smoothness and silky tannins, accompanied by fresh and salivating acidity.
