Roberto Bello’s culinary passion is evident in his standout creation for the Tribute to the Great Talents of Mexican Cuisine: the “Seafood Tower.” This dish is a true culinary masterpiece that combines the freshness of scallops, red tuna, raw shrimp, cooked shrimp, fish, and octopus, all bathed in a seafood red sauce that evokes the flavors of the sea. The tower stands majestically, accompanied by avocado, red onion, cucumber, and a mix of black sauces that enhance the marine flavors.
