Patricio’s Journey: A Path to Success in the Culinary World
Starting as a bar assistant at the Fanattic restaurant, he showed his passion and dedication from the beginning of his career. This starting point paved the way for what would become a successful career in the culinary field.
In 2010, Patricio made the decision to broaden his knowledge and perspectives by studying Food Service Management at the Instituto Regiomontano de Hotelería. This step in his education marked an important milestone as it provided him with the necessary tools to understand and manage key aspects of the restaurant industry.
A Restaurant with Identity: Koli | Cocina de Origen
Once he graduated, Patricio Rivera-Río, along with his brothers, Rodrigo and Daniel Rivera-Río, gave life to a unique gastronomic concept: Koli | Cocina de Origen. This establishment not only became a reference in the culinary scene but also marked an important milestone in Patricio’s career.
Patricio’s passion for wines and beverages experienced significant growth at Koli. Through a careful selection of wines and the creation of exceptional pairing experiences, he demonstrated his commitment to enriching diners’ experiences. Wines became the distinctive note that highlighted the authentic flavors of native cuisine.
The success of Koli was not long in coming. Two years after its opening, the restaurant was ranked as one of the top 120 restaurants in the country by the “Mexican Culinary Guide Nespresso – St. Pellegrino.” This achievement marked a recognition of the quality and authenticity of the culinary proposal that Patricio offered along with his team. This was just the beginning of an incredible list of recognitions that, to this day, have positioned it as one of the best restaurants in our country and a must-visit in the list of the best in Latin America.
