SINALOENSE CUISINE, A CULINARY TREASURE

Known as the shrimp capital and based mainly on seafood, Sinaloa’s gastronomy is famous for integrating seafood and local ingredients in its preparations, allowing the culinary art to overflow to create the most delicious dishes.

Its gastronomic roots have been perfected over time, which has allowed the national and international public to recognize and taste the flavors that make Mexicans proud and satisfy even the most demanding palate.

For this reason, we list our selection of the most representative dishes of this beautiful state and some of them can be found in our regional menu, exclusive of Porfirio’s Culiacán:

The Aguachile

It could be considered the standard of Sinaloan gastronomy, being one of the best known around the Mexican Republic, its preparation based on seafood from the region, cured in lemon, water and chile chiltepín stands out among the preparations that cannot be missing in a Sinaloan table.

At Porfirio’s Culiacán, you can find the Aguachile de Callo de Hacha within the regional menu with red serrano chile, the ideal starter to start a great meal.


Los Gobernador Tacos

Another of the most popular dishes in the region are the incomparable Gobernador Tacos. There are different theories about its origin, but the most accepted and popular one attributes its creation to a famous restaurant in Mazatlan, which received a visit from the then governor and was given the task of surprising him with an original dish.

The result was an exquisite combination of shrimp, machaca and grilled cheese on corn tortilla.

Rock Shrimp

Served on lettuce and prepared with chipotle mayonnaise, sesame seeds and chives are present in our regional menu, as they represent the vast gastronomy of the region and are undoubtedly one more option to delight the palates of seafood lovers.

Chilorio

This original preparation integrates pork meat, chorizo de cazuela, chile pasilla and a mixture of spices, which give the peculiar flavor to this dish. It is recommended to accompany it with a side of beans and warm corn tortillas to enjoy this gastronomic experience.

Chiles Rellenos de Jaiba

This appetizing dish is popular in Mazatlan for incorporating crab as the main ingredient in the stuffing of poblano peppers, complemented with tomato, butter and spices to make it a unique and exquisite reference.
