From the street to your table: a “Trompo al Pastor”

At Porfirio’s we are specialists in interpreting and reinventing the most representative dishes of our country taking it from the street to your table and this time we will talk about our famous Trompo al Pastor.

Trompo al pastor is a culinary preparation originally from Mexico that is made with pork marinated in spices and garlic, and then placed in a spinning top or spit and cooked over a fire. The success of a good carne al pastor is in slicing it thinly and serving it in corn tortillas, along with ingredients such as cilantro, onion, salsa and lemons.
