Inspiration in the Gastronomy of Puebla

The state of Puebla is known for its culinary heritage, with a wide range of dishes that combine native ingredients. Our inspiration for the Festival Poblano comes from this gastronomic richness, with the goal of offering our guests an authentic and memorable experience.

Puebla is not only famous for its mole, but also for a variety of dishes that reflect the history and cultural diversity of the region. At Porfirio’s, we have carefully selected a series of recipes that represent the best of Puebla’s cuisine, adapted with our contemporary touch.

Seasonal Dishes

During the Festival Poblano, you can enjoy a variety of traditional and creative dishes that highlight the ingredients and culinary techniques of Puebla. Here is our special selection:

-Buñuelo: Crunchy slices filled with rice pudding diplat cream and orange blossom essence. Served with cajeta and granola.

-Chanclas Poblanas: Bread drowned in guajillo chile, longaniza and chorizo marinade. Filled with pork, chorizo, avocado and red onion.

-Chalupas Poblanas: Tortilla smothered in green and red sauce, shredded beef with onion and fresh cheese.

-Cocoa Volcano: With liquid center and mixed nuts. Accompanied by cream ice cream and piloncillo marranito.

-Tinga Poblana Tostadas: Sautéed pork and sausage on blue corn toast, refried beans, lettuce, Cotija cheese and ranch cream.

-Market Quesadilla: Handmade blue corn tortilla filled with fresh vegetables, mushroom, squash blossom, quesillo and tlalitos. Served with martajada red sauce.

-Green Pipia: Made with pepita and green chile on grilled pork chop. Served with refried beans and Mexican style rice.

-Chicken with Mole Poblano: Finished with fried plantain and plantain chips. Served with Mexican style rice.

-Arabian Trompo: Trompito of Arabian meat marinated with spices. Served with chipotle sauce and garlic yogurt.

-Molotitos: Stuffed with beef tinga, cottage cheese and potato. Served with lettuce, fresh cheese, ranch cream and tatemada red sauce.

-Poblano Soup: Chicken broth, poblano peppers, corn, mushrooms, squash blossom and fresh cheese. Accompanied by handmade tortillas.
