History of Chile en Nogada
Origin and Meaning
Chile en Nogada has its roots in the state of Puebla, where it was created in 1821 to commemorate Mexico’s independence. According to legend, the Augustinian nuns of the Santa Monica convent prepared this dish for Agustin de Iturbide, one of the main leaders of independence. The ingredients and the colors of the dish – green, white and red – were chosen to represent the Mexican flag, symbolizing national pride and identity.

Chile en Nogada is a masterpiece of Mexican cuisine, known for its combination of sweet and savory flavors.
