Whisky Festival: A Season Designed to Change the Rhythm of the Table

The Whisky Festival at Porfirio’s was born from this idea: to take a spirit traditionally associated with classic settings and elevate it to a more open, contemporary experience, one more suited to today’s table.
Available only from May 1st to 31st, 2026, this edition features two cocktails created to explore different ways of understanding whisky.

Overnight: A More Immersive Profile

Some drinks are quickly discovered. Overnight takes a different path.
The combination of Buchanan’s 18, Frangelico, pineapple, and cajeta milk creates a more rounded profile, where the warm notes of the whisky find balance with softer, slightly tropical elements.
The texture changes as the drink progresses. The flavor does too. It doesn’t seek immediate intensity. It seeks lingering enjoyment.

Golden Brew: Depth from the First Sip

In contrast, Golden Brew moves in a more direct direction.
The blend of Johnnie Walker Gold Label, cold brew, and maple syrup creates a more defined structure, where the roasted notes and coffee character integrate naturally with the whisky.
Here, balance lies in precision. Nothing stands out too much. Everything moves at the same pace.

Two Cocktails, Two Ways to Experience the Night

What’s interesting about the Whisky Festival isn’t just each drink individually, but the dialogue between them.

A Season That Only Happens in May

Part of the festival’s character lies in its seasonality.

These creations will be available at Porfirio’s locations in Cancún, Playa del Carmen, Mérida, Coyoacán, Polanco, Toreo, and Guadalajara only until May 31, 2026. After that, they disappear from the menu.

And that changes the way they’re experienced.
