The experience began with a welcome drink that set the tone for the evening from the moment the guests arrived. Amid conversations, music, and the characteristic atmosphere of Porfirio’s Cancún, the night began to take shape around a table designed to share different flavor profiles before reaching the centerpiece of the collaboration. Everything was conceived as a journey.
Appetizers that Set the Rhythm of the Experience
The first part of the dinner focused on fresh and dynamic contrasts.
The steamed tacos provided a more relaxed and straightforward start, while the salmon and tuna tower with mango introduced a lighter and fresher profile. Next came the melted cheese, balancing the table with depth and texture, followed by the tlayuda with vegetables, which added a crunchy, vegetal element to the meal.
Each dish had a distinct intention. None sought to steal the show.
The Moment the Table Reached a New Intensity
As the evening progressed, the main courses arrived.
The trompo al pastor appeared with that spicy aroma that transforms the atmosphere as soon as it reaches the table, while the beef belly provided a more intense and structured profile, where fire and texture took center stage.

The finale arrived with the star of the evening: the Ceremonial Matcha Cheesecake.
Created in collaboration with Namasteali Roots, this dessert departed from the conventional. Ceremonial matcha added depth and character, maintaining a precise balance with the smoothness of the cheesecake.
It wasn’t a dessert designed to overwhelm. Its intention was different: to linger.

An important part of this collaboration lies in its limited availability.
The Ceremonial Matcha Cheesecake will be available exclusively at Porfirio’s Cancun until May 15th. After that, it will no longer be part of the menu.
This makes each visit more specific. More present.
