Whisky Festival: A Season Served in a Glass

Some seasons don’t announce themselves with visible changes, but their impact is felt from the first sip. They don’t transform the place, they transform the way it’s experienced. The Whisky Festival at Porfirio’s follows this logic. Two creations, a defined timeframe, and a clear intention: to reinterpret whisky without losing its character. Available from May 1st to 31st, 2026, it’s a one-off event. And that changes everything.

When Whisky Moves Towards the Unexpected

Whisky is usually associated with firm structures, intense profiles, and more leisurely moments. Here, the direction is different. Overnight presents a combination that doesn’t seek to dominate, but rather to envelop. Buchanan’s 18 is blended with a touch of Frangelico, while pineapple introduces freshness and cajeta milk provides a rounder texture. The result isn’t linear. It evolves with each sip.

It’s a cocktail that is discovered little by little.

A More Direct Contrast

On another note, Golden Brew takes a different path.
Johnnie Walker Gold Label meets cold brew and maple syrup in a more defined, more immediate blend. Here, the contrast is clear from the start: depth, toasted notes, a controlled sweetness that doesn’t detract from the whisky’s profile.
It doesn’t try to soften it. It complements it.

Two Ways of Understanding the Same Base

The interesting thing isn’t just in each cocktail, but in what happens when they’re compared.
One is more enveloping, the other more direct. One opens up over time, the other is defined from the first moment. Both start with whisky, but build different experiences at the same table.
That’s where the menu becomes a conversation.

A Season That Doesn’t Repeat Itself

The Whisky Festival isn’t permanent.

During May, these two offerings are available at the various Porfirio’s locations: Cancún, Playa del Carmen, Mérida, Coyoacán, Polanco, Toreo, and Guadalajara. After that, they disappear.

There is no continuity. Only the moment.

When time also defines the flavor

Some cocktails become classics. Others work best as limited editions.

The value here lies not only in the mix, but in its temporality. In knowing that each sip is part of something that won’t be available again.

Because sometimes, what’s served in the glass isn’t just a drink. It’s an entire season.
