Chiles en Nogada is one of those cases. A dish that combines sweet, savory, and spicy flavors in a single bite, and which only appears for a few weeks each year, as if the season itself decides when it’s time to serve it.<\/p>\n

A recipe that doesn’t wait.<\/strong><\/h2>\n

This summer, from July 15 to September 30, Porfirio’s presents its Chile en Nogada Festival, available in Canc\u00fan, Playa del Carmen, M\u00e9rida, Polanco, and Coyoac\u00e1n.
\nThe dish comes in two versions: battered, with its light, golden crust, and unbattered, straight to the flavor of the walnut sauce, without any layers in between. Neither version is more authentic than the other. There are simply two different ways to approach the same tradition.<\/p>\n

What accompanies the dish<\/strong><\/h2>\n

For this season, the bar also has its own story to tell: two cocktails created exclusively for the festival, the Nogadita and the Mestizo, designed to complement the flavors of the chile en nogada without overpowering them.<\/p>\n

A season, not a dish of the day<\/strong><\/h2>\n

What makes this festival special isn’t just the recipe. It’s knowing that, after September 30th, the table will be waiting again until next year.<\/p>\n
